Don't give in to fried chicken

Are you having a week like mine?

The giant stress cloud has moved overhead and has begun pouring on me. Too much to do!

I have found myself fighting a tough battle this week. Nothing commands comfort food like stress, and I am craving fried chicken like you wouldn't believe.

With that said, I haven't had any yet, but I don't think it would take much to push me off that cliff.

I guess we are in the third full week of this program, and I can understand why temptation is beginning to rear its ugly head. For the most part, we've eaten healthier and exercised, but now we start to miss the things we love so much.

This is the piviotal time. YOU CAN FIGHT THE TEMPTATION, AND SO CAN I! Say no to the chicken!

Keep on plugging away. You're doing great!

Instead of "frying" chicken, try this instead:

Mix 1 or 2 eggs, a shot of milk and instant mashed potato flakes and olive oil together to make a batter to dip the chicken in and bake it in the oven at 350 until done.

The potato flakes get really crunchy as the chicken bakes in the oven. To brown the "breading a little more, turn the broiler on after the chicken is done, but remember to keep your eye on the chicken, so the potato flakes don't burn to a crisp!

Use garlic and onion powder, salt and pepper and cayenne pepper (just a pinch) and parsley in the batter for a great flavor! We use home made honey mustard to dip the chicken in. Yum!

You have all the comforts of fried chicken without the guilt and grease that goes along with it.
