Sorry for the gap between posts, but to quote Mel Brooks, "Affairs of state must take precedent over affairs of state". In other words, lots of work deadlines have come and gone in the past few days, and the winter weather didn't help anything.
So, back to the program. Did anyone face the dreaded Super Bowl Binge? You know, the one where you host or attend a Super Bowl party and eat way too much junk food? Me too, but I will say that the thing I ate the most during the big game was actually the healthiest thing we made.
I simply mixed a few boneless, skinless chicken breasts with some Rotel, chile peppers, cumin, garlic, paprika and jalapenos, put it all in the Crock Pot and let it cook for about 6 hours until the chicken shredded itself. Wrap some of that in a tortilla (whole wheat is the healthiest), top with some salsa and enjoy. I was really impressed with my chicken tacos, and I pretty much made up the recipe on the fly using stuff we already had around the house. Delicious!
Of course, I did have a frosty beverage or two and a piece of chocolate cake, but overall, it could have been a lot worse.
And what a great football game. I found myself more into this particular Super Bowl than previous ones. However, most of the commercials were just awful. They're simply trying too hard!
